Vinification: Fermentation with indigenous yeasts in steel, maceration for about 20 days, racking and pressing of the marc.

Organoleptic description: Sciascinoso has a lively ruby ​​red color, with purple reflections. Bright and deep color. The aroma is intense, floral (rose and violet) and fruity with hints of blackberries and blueberries. The flavor is fresh and elegant. The tannin is well present but soft and perfectly integrated. A pleasant and easy-drinking wine.

PAirings

Pairing it is truly a pleasure, it goes well with practically everything or almost, recommended to accompany pizza, appetizers, delicate fish soups, pasta dishes, soft cheeses and white meats. Excellent also slightly chilled, around 12-14 degrees. I recommend an aperitif with bruschetta, tomato, basil and buffalo mozzarella.

HISTORICAL NOTES

Sciscinoso, also called Olivegina grape by Pliny in his Naturalis Historia, is one of the native Campanian vines that survived phylloxera. Sciascinoso is known by other names such as “Sanginoso”, “Sancinoso” and “Sanguinosa” and many confuse it with the more widespread Olivella, due to the elongated shape of the grape that resembles an olive. In reality, the two varieties are similar but do not have the same genetics, in fact in the treatise Ampelographie by Viala et Vermorel from 1909 it is stated that “Olivella and Sciascinoso are very distinct varieties.
